Pool House - Highlands, Scotland
About this Chic Retreat
Pool House is one of the UK's most b>environmentally friendly small luxury b & bs and has received awards in recognition of this. Pool House enjoys one of the most beautiful locations in North Western Scotland. Situated on the shore of Loch Ewe and alongside the mouth of the River Ewe, a house has occupied this commanding position for over 300 years. Once owned by Osgood Mackenzie, founder of the world famous Inverewe Gardens, Pool House has certainly witnessed and taken part in it's fair share of Historic events. The Harrison family have completely renovated and restored this small charming hotel using, wherever possible, original baths and fittings.
Accommodation
Pool House has 4 opulent suites & 1 single room; Pool House's association with the sea goes back a long way. During the Second World War it was the base for Lord Rowallan and the Highland Fieldcraft Training Centre who were stationed in Poolewe as well as being headquarters for the Royal Navy who co-ordinated their North Atlantic convoys from the house.
For this reason each of the 5 rooms have been named after a Navel vessel who during this time sailed and served in the chill waters of the North Atlantic. The interiors reflect more the potential destinations of these vessels conjuring up such ports of call as Bombay, Marseille and even Shanghai!
Activities
Walking, climbing, fishing, sailing, sea angling, golf, gardens, mussel picking.
Dining
Service is key at this small lluxury b & b and there's no better place to witness this than dinner at the 'North by North-West' dining room. Enjoying uninterrupted views of Loch Ewe one can spend a leisurely meal enjoying four star cuisine and world class wines. The Chef, John Moir has featured on several gourmet television programs and has made Pool House one of the best places to dine in the Highlands. On the menu you will find a strong emphasis toward local seafood, particularly Loch Ewe langoustine, lobster, scallops and quality Scottish products such as beef and lamb. Desserts are also a speciality with particular attention being paid to the traditional soft fruits of Wester Ross. A finelist of rare Scots Malts completes a memorable meal and a perfect evening. For breakfast expect to savour delicious porridge served in hand-carved wooden bowls and enjoy with a silver spoon.
